This is one of my “back-up” dinners I have for my kids. If I’m in a hurry or just feeling lazy, this is a great, quick and easy meal that they love. And it’s healthy to boot!
This recipe also represents one of the few times that I use the microwave to “cook.” Preheating and using a conventional oven is a waste of time and energy in this case.
My boys especially like it when I make the toppings into faces, or funny designs!
Ingredients:
- 1 whole plain or egg bagel, sliced in half
- 1/4 cup tomato sauce
- 1/2 cup grated mozzarella cheese
- 2 large slices dry salami or pepperoni
- 1 few sliced black olives
Preparation:

Total Prep and Cooking Time: less than 5 minutes
Toast the bagel halves and spread about 2 tablespoons of the tomato sauce on each half. Sprinkle each with about 1/4 cup of the cheese. Cut the salami or pepperoni into small pieces (or cute shapes), and distribute them on top of the cheese with the olives.
Place the bagels on a plate and microwave for about 40 seconds, until the cheese is nicely melted.

These are my boys’ favorite toppings, but feel free to try whatever your kiddos like the best — go nuts!
If you happen to be a gluten-free family (we are for the most part), this will work for you, too. Whole Foods sells pretty good gluten-free bagels in the freezer section.
