Hello, my name is Stacie and I am a chocolate-peanut-butter-a-holic, and Halloween “Peanut Butter Cup” Cupcakes are my ultimate weakness. Beware. This easy cupcake recipe makes for simple cooking with crazy good results.
Typically, I’m a natural foods kind of girl, but I’d be lying if I didn’t admit to enjoying an occasional dessert, but even when I snack, I try to stay relatively healthy, so I either make my own homemade peanut butter cups (it’s way easy), or if I’m in a rush, I use Unreal Candy or Justin’s peanut butter cups for this recipe.
Ingredients:
- ingredients for 1 dozen of your favorite chocolate cupcakes
- 2/3 cup all-natural creamy peanut butter
- ½ cup unsalted butter (1 stick), room temperature
- 1 tablespoon vanilla extract
- 5 cups powdered sugar
- 1 cup unsweetened cocoa
- ½ teaspoon salt
- ½ cup milk (skim is fine), plus more as necessary
- crumbled peanut butter cups
Preparation:
Step 1: Make one dozen of your favorite chocolate cupcakes; set aside. (Note: When scooping batter into the cupcake pan, you can fill each well halfway and add a small dollop of peanut butter before adding more batter to fill the well per recipe instructions. This will give your cupcakes a peanut butter center!)
Step 2: Combine peanut butter, butter and vanilla in a large bowl. Using an electric mixer and beat together until light and fluffy.
Step 3: Stir in sugar, cocoa and salt.
Step 4: Slowly beat in milk, adding a little at a time, until you reach desired consistency. You may use less than the full amount called for, or you may need a little more; how much you need will depend on your peanut butter consistency.
Step 5: Ice the cupcakes. Top with crumbled peanut butter cups.
