Sesame Chicken Strips with Root Veggie Fries

Who doesn’t love chicken and fries? Unfortunately most of the time this kind of dish isn’t exactly good for us, so I have an alternative.  Healthy baked chicken strips with a crispy sesame coating and root veggie fries that are made using sweet potato, carrot, and parsnips.

You simply chop the vegetables into matchsticks, this speeds up the cooking and ensures they turn out nice and crunchy, and bake in a hot oven for 25 minutes using very little oil. Easy.

While that is happening, prepare your sesame chicken by crumbing it in a mixture of panko crumbs and sesame seeds. I have used a mixture of white sesame seeds and black sesame seeds here, but a combination isn’t required.

Serve with a simple side salad and dipping sauce and this dish is sure to be a hit with the whole family.

Choose any root veggies you like; beetroot, turnip, daikon and celeriac would also work well.
