Yes, there’s a bit of honey (a bit is fine – I promise), and it’s mixed with a fruit and a vegetable! Did I mention how yummy it is? This “butter” is not only great on bread for breakfast, you can also spread it on a sandwich with turkey for lunch. It’ll be the perfect addition to a Thanksgiving sandwich made from your leftovers!
Ingredients:
- 2/3 cup roughly chopped, peeled apple
- 1/3 cup pumpkin puree
- 3/4 teaspoon cinnamon
- 1 tablespoon plus 1 teaspoon honey
- Salt
Preparation:
Makes approximately 2/3 cup
Add 1/4 cup water to the apple in a small, covered pot. Cook over low heat until the apple is soft, about 10 to 15 minutes. Drain the apple, and on a cutting board or in a small bowl, use a small fork to mash it into a puree. Then return it to the pot and add the pumpkin, cinnamon, and honey. Mix and cook over low heat for about 5 minutes, stirring every minute or so. Season to taste with salt.

It’s a great idea to make a few times the recipe to have on hand — it keeps for a few weeks in the refrigerator.
