Last thing I knew I was eating a comforting stew on cool fall evening, and now I’m gearing up the grill for hot summer days and outdoor cooking!
There’s almost always at least one vegetarian guest at a summer BBQ. It’s always delightful as that guest, not to feel as though anyone is making a fuss over you. That’s why I always like to have a vegetarian option at the ready!
These vegetarian black bean burgers are so easy to prepare, and so incredibly delicious to eat! You might just want to forgo the meat all together and call it a day with these!
Add whatever fixins you love and have on hand. Tomatoes, lettuce, spinach, cheese, whole wheat buns, sour dough rolls, you name it!
Ingredients
- 2 (15 ounce) cans black beans, drained
- 1/2 cup finely chopped scallions
- 1/2 cup Panko breadcrumbs
- 2 teaspoons minced garlic
- 1/2 teaspoon ground cumin
- 1/8 to 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil
Preparation

In a large bowl, mash the beans with a large fork. They should be a cross between a puree and small bean chunks.
Add the scallions, breadcrumbs, garlic, cumin, and cayenne, salt and pepper. Stir to combine all of the ingredients.
Form the bean mixture into four evenly sized burgers and place them on a large plate.
Preheat the outdoor or stove top grill.
Once it’s very hot, drizzle the burgers with a bit of olive oil and place them on the grill. You should hear a sizzling sound. If you don’t, wait until the grill is hotter!
Grill burgers for about 3 minutes on each side. They should be nicely browned when they’re done.
