Rainbow PNJ Sandwich

My six-year-old son still doesn’t like bread crust! Really? I don’t get it.  It’s the part of the dough that becomes so nicely caramelized and crisp in the oven.  Odd as I may think it is, my boys are not alone — many kids don’t eat their crusts.

For fun, I created a “crust” that will not be left on your child’s plate . . . ever.  Sprinkles!  I use multi-colored, but feel free to use your child’s favorite color, or whatever suits your mood.  This is great for a quick lunch, or for a party to make a very pretty, fun presentation on a platter! This is also a great one to let your kids help with.  They’ll love to dip the bread into the sprinkles!

Ingredients

  • 2 slices of bread
  • about 1 1/2 teaspoons creamy peanut butter
  • about 1 1/2 teaspoons of your favorite jelly
  • 1 teaspoon unsalted, softened butter
  • about 2 tablespoons rainbow sprinkles

Preparation

Makes 1 Sandwich

Stack one slice of bread on top of the other and, using a serrated knife, remove the crusts.  Spread the peanut butter on one slice, and the jelly on the other.  Put the sandwich together and cut diagonally to make two triangles.  With a spreading knife, spread the edges of each triangle (where the crust was) with the softened butter.  Place the sprinkles on a plate and with a bit of pressure, press the buttered edge of each sandwich into the sprinkles — it will become the new “crust.”
