Truth be told, I’m one of those busy moms who’s often caught eating quickly on the go…and it’s typically a cookie.
My husband is always saying, “Please sit down, at least for a couple minutes.” He’s absolutely right! So I’ve been making an effort to do just that in the mornings with a healthy breakfast.
This is one of my favorites. It really only takes two minutes to make – and it’s just sort of deliciously thrown together. If you prefer your egg scrambled, go ahead and scramble it in! The measurements here are guidelines, you don’t need to get too precise or consistent with this one. In fact, for the chips I often use a small handful those bits at the bottom of the bag that nobody really eats! And if you want make this yummy breakfast for the whole family, use a large saute pan and multiply it!
Ingredients
- 1 tablespoon olive oil
- 1 egg
- 1 cup packed spinach leaves
- about 10 tortilla chips*
- about 3 tablespoons salsa*
- 2 tablespoons grated Cheddar cheese
- Salt and pepper to taste
Preparation
Makes approx. 1 serving
Coat the bottom of a medium saute pan with the oil and place over low-medium heat. Crack the egg off to one side of the pan and season it with a bit of salt and pepper. While the egg begins to cook, add the spinach to the other part of the pan. Then, add the salsa and chips where you please. Once the egg is cooked, which should take a little over a minute, mix everything together. Season to taste with salt and pepper.
* I love blue corn chips but use what you have!
