I have to admit, I’m the sort of cook who loves to spend the day in the kitchen. Really. It makes me happy and relaxed. That said, with two young boys and a new puppy, sometimes I need something for dinner that I can whip up in a matter of minutes.
And it has to be healthy! (Or no dessert!)
Kids love this dish! Grown ups love this dish!
With one pan and essentially 4 ingredients, I’m not sure why you wouldn’t just make this tonight!
Let’s do it, shall we?
Ingredients
- 2 cups of your favorite marinara sauce
- 2 eggs
- 1 cup frozen peas, thawed
- 1/2 cup shaved Parmesan cheese
- Salt and pepper
- 2 thick slices of country bread
Preparation
Total Prep and Cooking Time: 10 minutes
Add the marinara sauce to a medium skillet, place it over low-medium heat, and bring it to a simmer.
Break the eggs into a cup, and then carefully add them into the tomato sauce, with a few inches between them. Sprinkle the peas around the eggs, turn the heat to low, cover the pan, and simmer until the whites are set but the yellow yolk shows through, about 4 minutes.
Sprinkle the sauce with the cheese, and the eggs with a bit of salt and pepper.
Serve with a slice of country bread.
An additional note:
For the grown ups int he family, this dish is fantastic with a touch of heat added to it! A sprinkling of cayenne pepper or chili flakes in the simmering marinara sauce is perfect!
