Christina's Healthy Tip #2: My Favorite Soup Recipe
Christina shared her favorite nutriotious quick 'n easy soup recipe with us!
She says, "Everybody needs a good dose of soup when the cold weather hits. I make a quick and easy vegetable soup: I start with organic vegetable broth, then I boil some glute-free pasta noodles in the broth. About 3 - 4 minutes before the pasta is cooked, I throw in some greens like kale, chard or spinach (or all three! although it's important to remember that spinach takes less time to cook than the other two). I like to top the soup off with a squeeze of fresh lemon juice to add a little zing."
