Back-to-school in my house means back to the morning rush out the door. And breakfast for the family often falls short of substantial because of the mayhem, which is why there’s no such thing as too many make-ahead breakfast casseroles in our kitchen. Whether it’s a French toast bake or a standard bacon, potato and egg dish, make-ahead breakfasts reduce the stress dramatically and lets me know that the kids have eaten at least one real meal for the day.
Breakfast casseroles are also ideal because they are totally customizable depending upon your family’s taste (enter the picky eater) and whatever you have in your pantry. No bacon? Leave it out! Craving cheese? Name one casserole that doesn’t taste better with it! And I don’t know about you but I could use every precious minute in the morning for important things like looking for missing favorite socks and packing lunches before the bus arrives!
These 10 make-ahead breakfast casseroles can be prepared a day in advance and stored in the fridge until you are ready to pop one into the oven.
