Mexican-Style Stuffed Chicken Recipe Using Air Fryer

Ingredients

  • 4 extra-long toothpicks
  • 1 skinless, boneless chicken breast
  • 4 teaspoons chili powder, divided
  • 4 teaspoons ground cumin, divided
  • 2 teaspoons Mexican oregano
  • 2 teaspoons chipotle flakes
  • Salt and ground black pepper, to taste
  • ½ red bell pepper, sliced into thin strips
  • ½ onion, sliced into thin strips
  • 1 fresh jalapeño, sliced into thin strips
  • 2 teaspoons corn oil
  • ½ lime, juiced

Preparation 

  1. To make the Mexican-style stuffed chicken, place toothpicks in a small bowl and soak them in water to keep them from burning while cooking.
  2. Preheat your air fryer to 400 degrees Fahrenheit.
  3. Mix two teaspoons of chili powder and two teaspoons of cumin in a shallow dish.
  4. Place chicken breast on a flat work surface. Then, slice horizontally through the middle.
  5. Pound each half using mallet or rolling pin until 1/4-inch thick.
  6. Sprinkle each chicken breast half equally with the remaining chili powder, cumin, chipotle flakes, oregano, salt, and pepper.
  7. Place half the bell pepper, onion, and jalapeño in the center of one of the chicken breast half.
  8. Roll the chicken from the tapered end upward and use two toothpicks to secure it. Repeat the process with other chicken pieces as well.
  9. Roll each chicken roll-up in the chili-cumin mixture while drizzling with olive oil until evenly covered.
  10. Place them in the air fryer basket with the toothpick side facing up. Set a timer for 6 minutes.
  11. Turn roll-ups over and continue cooking until an instant-read thermometer inserted into the center reads 165 degrees Fahrenheit. Leave it in there for five more minutes.
  12. Drizzle lime juice evenly on roll-ups before serving.
