Super Easy Eggless Pancake Recipe for Breakfast

Pancakes are the favorite breakfast of kids and adults alike. However, most pancake recipes have eggs, making it difficult for kids with allergies or vegans to include them in their diet. For those who can’t have pancakes with eggs, here’s a super easy recipe that is eggless and can be enjoyed by everyone. If you are wondering whether the pancakes will be fluffy, they will turn out as fluffy and light as a regular pancake recipe.

The best part is that you can substitute the ingredients to suit your needs. For instance, you can use gluten-free flour instead of all-purpose flour if you tend to stick to a gluten-free diet. You can also use plant-based butter and oat milk to suit your taste buds or make the recipe vegan.

Moreover, you can easily make these eggless pancakes a day before and store them overnight in an airtight container. The following day, reheat them in the microwave for 10 seconds. Or, make a large batch of eggless pancakes, place them on a wire rack, and freeze them flat. Once frozen, you can store them in a bag in the freezer for up to three months. You can use the toaster to reheat the same.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 4 tablespoons butter, divided
  • 1 cup milk
  • 1 tablespoon oil
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • Some butter, maple syrup, and berries for serving

Preparation

  1. To make the fluffy eggless pancakes, whisk together the dry ingredients (flour, sugar, baking powder, and salt) in a bowl.
  2. Melt two tablespoons of butter in a glass measuring cup. Then, add milk, oil, water, and vanilla extract. Whisk together until combined.
  3. Now, pour the butter mixture into the dry ingredients and whisk until just combined. Do not overmix or overstir. Lumps are completely fine in pancake batter!
  4. Cook the eggless pancakes in batches. Melt half a tablespoon of butter in an iron skillet (or nonstick pan) over medium-low heat. Add two ¼-cup scoops of pancake batter, and cook until bubbles appear around the edges and the top starts to dry.
  5. Flip and cook the other side for a minute or just until set. Remove from heat and place on a wire cooling rack so they don’t get soggy while the rest of the batch cooks.

Now, your eggless pancakes can be served with extra butter, maple syrup, fresh berries, fruits, or whipped cream, depending on what you and your kids like.
