It’s almost summer, which means it time for fun outdoor activities like camping, hiking, and BBQs. The classic summer treat? S’mores, of course! Everyone loves them so I decided to turn them into a more elegant dessert I could serve at patio parties to adults and kids alike, so I came up with this pie recipe for S’mores Pie. It’s an easy recipe and a huge crowd-pleaser. Try it at your next party!

Ingredients:
- 12 whole graham crackers.
- 1/3 cup granulated sugar
- ½ teaspoon salt
- ½ cup melted, unsalted butter
- 2 tablespoons creamy peanut butter
- 1 ½ cups semi-sweet chocolate chips
- 1 cup heavy cream
- 1 ½ cups small marshmallows
Preparation:
Step 1: Preheat the oven to 375 degrees. Use a food processor to finely grind the graham crackers into crumbs so that you have 2 cups of graham cracker crumbs.
Step 2: Pour the crumbs into a medium mixing bowl and combine with the sugar, salt, melted butter and peanut butter. Combine until all the ingredients are well incorporated.
Step 3: Gently press the mixture into a 9½ inch pie plate or tart pan.
Step 4: Bake for ten minutes and then set aside to cool completely, for about 1 hour.
Step 5: While the pie crust is baking, make the filling. To do this, add the chocolate chips to a medium-sized mixing bowl and set aside.
Step 6: Pour the cream into a small sauce pan, and over medium heat, warm just until it starts to bubble along the edge. It should be very hot, but not quite boiling. Remove from heat and pour directly over the chocolate. Let it sit for a few minutes and then mix gently with a wooden spoon. It will take a minute of mixing before it’ll come together—just when you think it might not be working, it’ll turn into a thick chocolaty blend.
Step 7: Pour this chocolaty mixture back into the same sauce pan, and over low heat, add the marshmallows. After a few minutes, they will begin to melt into the chocolate. Mix until you see swirls of white, and remove from the heat.
Step 8: Pour the filling into the cooled crust, and let it set for at least an hour in the fridge.
Note: Want to make this gluten-free? Insteadof graham crakers, substitute Smoreables. They are a delicious gluten-free graham cracker and work extremely well for this crust. They are about half the size of regular graham crackers, so double the amount. You can find Smoreables at organic stores like Whole Foods.
