Ingredients:
- 4 egg whites
- 1/2 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- Pink and purple food coloring
- Red sugar for sprinkling
Preparation:
Makes approximately 4 dozen meringues
Total Prep Time: 20 minutes
Total Cooking Time: 45 minutes
Preheat the oven to 225 degrees and line two baking sheets with parchment paper. Set aside.
In a medium-sized mixing bowl, use an electric mixer with the whisk attachment on medium speed to whisk the egg whites until frothy, about 1 minute. Add the cream of tartar and about half of the sugar and whisk on a high speed, gradually adding the remaining sugar. Continue to whisk until stiff peaks form, about 4 minutes. Divide the mixture into two bowls and add a bit of pink food coloring to one and purple to the other.
Use a spoon to put each of the colored egg mixtures into their own pastry bag with a medium-sized round tip — or use zip-lock bag.
If you’re using a zip-lock bag, simply cut about 1/4-inch off one of the bottom corners.
With the color of your choice, pipe approximately 2-inch circles (hugs) onto one of the prepared baking sheets and use the other color to pipe approximately 2-inch X’s (kisses) on the other. Sprinkle the hugs and kisses with a bit of red sugar
Bake in the preheated oven for 45 minutes. Then turn the oven off and keep them inside the oven for another hour, until the oven has cooled down. They are slightly fragile, so be a bit gentle when you remove them from baking sheets.
You can use a pretty tin container or something as simple as clear cellophane bags tied up with a ribbon to wrap these up and give out as gifts to your loved ones!!
