You can make dessert special with every day items you already have in your kitchen. Combine store-bought or already baked cookies with ice cream, and voila! You have delicious Ice Cream Sandwiches! It just takes a little planning to give your family a unique treat. Best of all? This makes a great cooking with kids activity, so ask your little ones to help!
Ingredients:
- Chocolate Cherry Cookies (or really any leftover cookies)
- 1 pint of your favorite brand of ice cream (my husband loves cherry ice cream with his cherry cookies)
Preparation:
Step 1: Take the ice cream container out of the freezer and set it on the counter next to your work space.
Step 2: Line up half the cookies on a baking sheet, bottom side up (so flat side up). (*This a great step for little hands!)
Step 3: Place a large scoop of ice cream on each (depending on the cookie size, I use either a ¼ cup or 2 tbl spoons)
Step 4: Top with a second cookie, bottom side down (flat side against the ice cream). (*This is a great step for little hands!)
Step 5: Press cookies together, gently.
Step 6: Serve immediately or freeze for later.
