I generally don’t think of tofu as just a substitute for meat or other protein. I eat everything, and tofu is often my first choice. I love that it’s a healthy ingredient that can essentially take on any flavors added to it, making it incredibly versatile and fun to cook with. Convincing my sons of this though? That was a different story. “Too rubbery,” they’d both complain. It took quite a few attempts at different recipes to finally convince them that tofu is hardly different than their favorite chicken tenders—all it took was playing with the right flavor and texture combinations.
