“Oooh, what’s that?” my son asked when I was making dinner the other night.
“Buffalo chicken meatballs,” I replied.
“Oh wow, they smell so good.”
Buffalo chicken used to be a flavor combination that I reserved for game day in the dead of winter. But why only have it then? The combination of buffalo sauce is delicious in so many dishes. It’s awesome on top of macaroni and cheese, amazing served in wraps and irresistible in meatball form. I’m telling you, if you love buffalo wings, you’re going to love these super easy and mess-free buffalo chicken meatballs. And they’re a whole lot healthier than the traditional appetizer! And have I mentioned that they only take about 30 minutes to make?
I like to serve them with a big tossed salad but feel free to pair them with pasta, mac and cheese or place them on rolls and serve them as sliders. Regardless of how you serve them or how spicy you decide to make them, you can guarantee that these buffalo chicken meatballs will be flavorful and so delicious! Ground chicken is combined with seasonings, an egg and breadcrumbs and rolled into meatball form.
They’re baked in the oven until they are golden on the outside. The meatballs should reach an internal temperature of 170 degrees Fahrenheit.
Then the meatballs are drizzled with buffalo sauce. Toss it all together so they get nice and coated.
