Quick Lemon Ginger Green Soup

This is a fantastically delicious, somewhat light soup.  It’s also the perfect thing to help clear a family member’s stuffed up head and nose. 

The ginger and horseradish are especially helpful in temporarily relieving some common symptoms of a cold. This soup is sweet, spicy, fragrant, and incredibly tasty!

Ingredients:

  • Olive oil to coat the pan
  • 1/2 cup finely chopped onion
  • 1 tablespoon horseradish
  • 1 tablespoon tomato paste
  • 2 teaspoons finely minced garlic
  • 2 cups frozen peas, thawed
  • 1 cup packed spinach leaves
  • 2 1/2 cups hot water
  • 2 Lemon-ginger tea bags
  • 2 teaspoons Agave nectar
  • 1/4 cup half and half

Preparation:

Coat a medium-sized saucepan with olive oil.  Add the onion, horseradish, and garlic.  Cook over medium heat until the onion is soft, about 3 minutes. Add the tomato paste and cook until it begins to stick to the bottom of the pan and become slightly brown, about 1 minute.  Then add the peas and spinach, stir to combine with the other ingredients and cook until hot, about 1 minute.  Pour in the hot water and place the two tea bags so they are fully immersed in the water.  Turn the heat to low, cover the pot and simmer for about 10 minutes.  Remove the tea bags, and puree the soup in a standing or hand blender to the desired consistency. Add the Agave and half and half and season to taste with salt and pepper.
