Okay, I’ll tell you right off the bat: the “quick” in my Quick Agave Yams will be courtesy of your microwave oven.
There’s not much I love more than roasting and braising all day, but with two young kids, well . . . sometimes I need to use the microwave! Both my boys love these yams – which I love!
Ingredients:
- 4 medium-sized yams
- 1 tablespoon olive oil
- 1 tablespoon unsalted, melted butter
- 1/2 teaspoon agave nectar
- 1/8 teaspoon cinnamon
- Salt and pepper to taste

Wash and dry the yams (keep the skin on – it’s great, too). Place a double layer of paper towels on the bottom surface of the microwave.
In a small bowl, mix the olive oil, butter, agave nectar, and cinnamon together. Add a bit of salt and pepper to taste.
Use a fork to poke holes on all sides of each yam. Place the yams on the towels in the microwave. Cook on high for 3 minutes, turn them over, and cook for another three minutes. If they’re not soft at this point, continue to cook using 30-second intervals, until they are soft.
Place the yams on a plate or cutting board, and slice each one in half to let the steam out. Then make a few cuts (about 1/2-inch deep) into the flesh of each half. Drizzle the agave mixture evenly over the yams.
