A bottle of dressing like my new fave, Hidden Valley Ranch Farmhouse Originals Southwest Chipotle, can really save the day, especially if you find yourself with a nearly empty pantry or fridge. Add a 1/4 cup or so to meatloaf, burgers and soups, spread it on a sandwich or drizzle it over a baked potato. No matter how you choose to use it, remember, dressing is not just for salads anymore.

Ingredients:
- 2 tablespoons olive oil
- 1 pound ground chicken
- 1 egg
- 2/3 cup seasoned breadcrumbs
- 1 scallion, thinly sliced
- ¼ cup cilantro, finely chopped
- 1 clove garlic, minced
- 1/3 cup Hidden Valley Ranch Farmhouse Originals Southwest Chipotle Dressing, plus another 1/2 cup for garnish
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 – 6 pieces of butter lettuce (or any lettuce you prefer)
- 1 large tomato, cut into thin wedges
- 1 small red onion, finely sliced
Preparation:
Step 1: Preheat oven to 375F. Grease a rimmed baking sheet with olive oil.
Step 2: In a large bowl, combine chicken, egg, breadcrumbs, scallions, cilantro, garlic, Hidden Valley Ranch Farmhouse Originals Southwest Chipotle Dressing, salt and pepper. Mix with your hands until just combined.
Step 3: Using wet hands, roll about 1/4 cup of mixture into approximately 12 balls. Place onto prepared baking sheet.
Step 4: Bake meatballs until they are cooked through, turning once halfway through the cooking process (about 20 – 22 minutes total).
Step 5: Place lettuce inside each of the rolls and top each with approximately 3 meatballs. Garnish with tomatoes, onions and a drizzle of Hidden Valley Ranch Farmhouse Originals Southwest Chipotle Dressing. Enjoy!
