Spinach and Cheese Arancini Recipe

Arancini is the fancy Italian word for rice ball—and they are AMAZING. ;Best of all, rice balls are fairly simple to make and even easier to eat. They are perfectly portable. so add a few to a sandwich baggie for a car snack or even in your kids lunch boxes as a fun eat-with-your-hands lunch. Or, serve them as a light supper alongside a salad. This Spinach and Cheese Arancini recipe is completely vegetarian but you can easily add in some ham, turkey or sausage to the mix to make it heartier and appealing to meat-lovers..
