Ingredients:
- 2 sheets frozen puff pastry, thawed in the refrigerator
- 1 egg
- 1 tablespoon water
- ½ cup Parmesan cheese, finely grated
- ½ cup Pecorino Romano cheese, finely grated
- 1 teaspoon Kosher salt
- 1 pinch freshly ground black pepper
Preparation:
Step 1: Preheat the oven to 375F.
Step 2: In a small bowl whisk together the egg and water and set aside.
Step 3: Lightly flour your surface and roll out one sheet of puff pastry until it forms a 12 inch square.
Step 4: Brush the egg mixture over the puff pastry and immediately sprinkle with ¼ cup Parmesan, ¼ cup Pecorino, ½ teaspoon salt, and a pinch of the black pepper. Gently pat down all of ingredients with your fingertips so that they press into the puff pastry and are embedded in the dough.
Step 5: Using a sharp knife or pizza cutter cut the pastry into 12 evenly sized strips. Handle each strip at the end with your fingers and gently twist it to form a loose spiral.
Step 6: Bake for 12 to 15 minutes or until the pastry is puffed up and lightly brown.
Step 7: Cool and serve at room temperature. Straws can be kept in an airtight container for up to 2 days before serving.
