Ingredients:
- 4 ounces fresh spinach, chopped
- 1 TBsp chopped onion
- ½ garlic, minced
- 1 TBsp olive oil
- 1 cup cottage cheese, full fat or 4%, organic
- 1 small grated carrot
- 3 TBsp Parmesan cheese, freshly grated
- ½ tsp. Italian Seasoning, salt-free – pure herbs
Preparation:
PREHEAT: Burner, medium temperature
PAN: Frying pan: medium size
EQUIPMENT: Blender, medium bowl
COOK TIME: 5 minutes
PREP TIME: 7 minutes
Number of Servings: 4-6, depending on ages
Saute the first 4 ingredients in a pan until the spinach is cooked. Cool. Squeeze out extra water. Then add the cottage cheese and place in the blender, puree until smooth and place in a bowl. Then stir in the grated carrrot, parmesan cheese and Italian Seasoning into the pureed cottage cheese, mix well and add the spinach.
OPTIONS: Use pre-cooked frozen spinach. Thaw, squeeze out extra juices. Quickly sauté with onion and garlic. Cool. Then mix into pureed cottage cheese mix. For thinner blend, stir in organic milk until reaches desired consistency.
