It’s officially springtime, and Cinco de Mayo is upon us! Cinco de Mayo is one of my favorite holidays because my whole family loves Mexican food. The flavors of Mexican cuisine can be fresh, vibrant, bold, and delectable!
This is a delicious, festive guacamole that both kids and adults will love! Serve a bowl of this with salty tortilla chips for your Cinco de Mayo celebration. Or to celebrate any day!
Ingredients:
- 1 large ripe avocado
- 3 large strawberries, chopped into a small dice
- 1 small mango, chopped into a small dice
- 1 tablespoon finely chopped cilantro leaves
- Juice of 1/2 of a lime
- Salt, pepper and sugar to taste
Preparation:
Serves 2 to 4
Total Prep Time: 10 minutes
Cut your avocado in half, remove the pit, and then scoop out the flesh with a spoon. In a small mixing bowl, mash the avocado with the back of a fork. I like to keep the avocado slightly on the chunky side. Add in the strawberries, mango, cilantro, and lime juice. Combine these ingredients and then season generously to taste with salt, pepper, and just a touch of sugar.
