Marshmallow Rice Bar Ghost Recipe




Need a fun snack to make for Halloween? Kids love this creepy holiday treat that's easy to assemble. In fact, this is a great cooking with kids project! My daughter is still a preschooler, so we stick with kitchen crafts that are simple and fun like these Marshmallow Rice Bar Ghost Treats

These treats only require three ingredients and don't take too long to make. In fact, they can be made in stages which is even better for her short attention span. They are also completely nut-free, which makes them safe for school!

Ingredients:

  • 3 tablespoons unsalted butter
  • 10 ounces large marshmallows
  • 6 cups rice cereal (like Rice Krispie Treats)
  • 8 ounces white chocolate, roughly chopped
  • mini chocolate chips, as needed (about 1 cup)

Instructions: 

Step 1: In a saucepan over medium heat, melt the butter and marshmallows, stirring until they are one smooth cream.

Step 2: Remove form heat and imediately pour in the rice cereal and mix well using a wooden spoon. 

Step 3: Allow the mixture to cool slightly. Line your counter with parchment paper.

Step 4: Using a melon scooper or a spoon, scoop large mounds of your rice-marshmallow mixture onto the parchment paper. Use your hands (or your child's hands!) or a cookie cutter to mold the mixture into ghost shape treats.

NOTE: I find it easiest to do this with my hand lined with wax paper to prevent sticking.

Step 5: Place the molded treats on a lined cookie sheet and chill for at least two hours in the fridge.

Step 6: Put your white chocolate in a microwave safe bowl.

Step 7: Melt your chocolate (I did this in the microwave). Dip the one half of the marshmallow-rice ghosts in the white chocolate and return them to the baking sheet, chocolate-side up. 

Step 8: Make a little face on the ghosts with the mini chocolate chips. Return to the fridge and an chill for one more hour, or until the white chocolate is set.
