This recipe is suitable for babies 6 months and older
Sweet Potato Banana & Rice Puree
Ingredients:
- 1 medium sized sweet potato, baked
- 1 banana, peeled
- 1/2 cup rice, cooked *
Directions:
Step 1: Preheat oven to 400 degrees F.
Step 2: Wash and scrub a medium sweet potato (try to prepare a bunch of sweet potatoes rather then just one; heating the oven for one sweet potato is not energy efficient. You may also bake a sweet potato beside the main course you are roasting for the family.)
Step 3: Bake for approximately 45 minutes to 1.5 hours.
Step 4: Once sweet potato is baked, allow to cool.
Step 5: Remove sweet potato flesh from skin and transfer to blender/food processor.
Step 6: Peel the banana and then cut or break into bits, transfer into blender/food processor.
Step 7: Add the cooked rice to the blender/food processor .
Step 8: Blend the ingredients into a texture that will suit your little one’s needs. Add water, breast milk and/or formula to thin as needed.
The recipe freezes well but may separate upon thawing and heating; stir vigorously to combine.
* Brown rice is a better option for babies as it contains the whole of the grain and therefore more nutrients. While I used jasmine rice for these photos (and for my curry dish), you may find brown jasmine rice at your local grocer’s.
Variations:
Finger Food Meal: Dice baked sweet potato and bananas and then add to a scoop of cooked rice. Top with a dollop of plain yogurt if desired.
