Ingredients:
- ½ cup whole spelt flour
- ½ cup rolled oats
- ½ teaspoon baking powder
- ¼ teaspoon sea salt
- 1 teaspoon ground cinnamon
- ½ cup shredded carrots
- 1 tablespoon flax seed meal
- 1 tablespoon chia seeds
- ¼ cup honey
- ¼ cup coconut oil (melted)
- ½ teaspoon vanilla extract
Preparation:
Step 1: Preheat oven to 350 degrees.
Step 2: In a medium sized bowl combine spelt flour, rolled oats, baking powder, sea salt, cinnamon, shredded carrots, flax seed meal, and chia seeds.
Step 3: In a smaller bowl, whisk together honey, melted coconut oil, and vanilla extract.
Step 4: Add honey mixture to the dry-ingredient bowl, and mix until well combined.
Step 5: Using a tablespoon, drop cookie dough onto prepared baking sheets, making sure not to overcrowd them.
Step 6: Bake for 10 – 12 minutes. Cool completely, and serve.
