makes 48 mini-cupcakes
Ingredients:
- 2 eggs, room temperature
- ½ cup vegetable oil
- 1 cup sugar
- 1 ½ cups all-purpose flour
- 8 ounces pumpkin puree
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 pinch kosher salt
- 1 can vanilla frosting from the store
- 1 red or black decorating gel pen
- mini-muffin tin
- 1 toothpick
Preparation:
Step 1: Preheat the oven to 350 degrees. Spray the cups of the mini-muffin tin or line them with paper liners.
Step 2: In a mixing bowl combine the eggs, oil, and sugar. Add the pumpkin and mix well.
Step 3: In a small bowl combine the flour, baking soda, cinnamon, and salt. Pour this into the wet ingredients, mixing slowly, until the flour is fully incorporated.
Step 4: Fill the cavities of muffin tin with the batter so that each cavity is about ¾ full.
Step 5: Bake for about 18 – 20 minutes, or until the tops spring back when touched. Allow them to cool for about 5 minutes in the pan. Then, pop them out and cool on a wire rack until room temperature.
Step 6: Frost the top of each muffin with the vanilla frosting.Have your kids help with this.
Step 7: To make the spiderwebs on top of the muffins, have your child use the gel pen to make three small concentric circles on top of the muffin. Then, your kid can drag a toothpick from the inner to the outer circle to create the web effect.
